Wow! This request mirrors something I am working on as well. My son and I are
advisors on a role playing software game that is trying to create aspects of
coming of age rituals, etc. based on medieval European practices. While
apprenticeship is already a part of the game it is not well implemented and we
are trying to add some realism to the process. So any ideas from anyone would
be very helpful as searches turn up so much commercial garbage I am really
disgusted with it. If anyone knows of a search engine that allows one to
'block' commercial sites that would be very helpful as well.

In my own research I have found much more on native american practices, and the
most luck I have had in searching has been on masonry - templar etc. But these
secret rituals are only one aspect of dealing with adolescent rebellion and
socialization practices of this time. Any ideas you could lend me would also
be very helpful.
